About the Event
This Lactofermenting, Sprouting and Vegan Cookery Course will teach you the fundamentals of cooking to optimize Gut Health for you and your clients.
Where possible I will be using local seasonal ingredients and will give suggestions on how each recipe can be modified throughout the seasons.
I will give you an introduction to key ingredients and hacks in creating the right balance of flavour.
We will create 3-6 items in total per module which will be packaged up for you to take home at the end of the afternoon.
First Module 2/10/23: Lacto Fermentation

Second Module 5/10/23: Vegan Cooking Indian
Chole (spiced Chickpea Curry) or Spiced Dahl with Butternut & Kale
Aromatic Jeera Rice
Cauliflower Potato Pea Curry
Dosa (Fermented Rice Lentil Pancakes)
Coconut Raita, Pickled Red Onion & Tamarind Chutney
Third Module 9/10/23: Vegan Cooking European
Lasagne with Sprouted Bean & Pea Protein Mince Ragu & Mushrooms
Vegan Cheese Sauce
Moussaka with Soy Mince, Kidney Bean & Aubergine or Crispy Tofu
Fouth Module 12/10/23: Vegan breakfast & Brunch
Chickpea Omelette or Spanish Tortilla
Sprouted Quinoa or Oat Porridge with Chocolate, Coconut & Raspberries
American Pancakes with Coconut Yoghurt and Seasonal Fruit Compote
Vegan Banana Bread
