About the Event

This Lactofermenting & Sprouting and Vegan Cookery Course will teach you the fundamentals of cooking to optimize Gut Health for you and your clients.

Where possible I will be using local seasonal ingredients and will give suggestions on how each recipe can be modified throughout the seasons.

I will give you an introduction to key ingredients and hacks in creating the right balance of flavour.

We  will create 3-6 items in total per module  which will be packaged up for you to take home at the end of the afternoon.

First Module - Monday 2/10/23: Lacto-Fermentation

Second Module - Thursday 5/10/23: Vegan Indian Cuisine

Chole (Spiced Chickpea Curry)

Aromatic Jeera Rice

Cauliflower Potato Pea Curry

Dosa (Fermented Rice Lentil Pancakes)

Coconut Raita, Pickled Red Onion & Tamarind Chutney

Third Module - Monday 9/10/23: Vegan International Cuisine

Lasagne with Sprouted Bean & Pea Protein Mince Ragu & Mushrooms

Vegan Cheese Sauce

Cauliflower Cheese

Asian Garlic Tofu

Spring Onion Soy Noodles

Fourth Module - Thursday 12/10/23:  Vegan Breakfast, Brunch & Bakes

Tofu Scramble

Chickpea Omelette or Spanish Tortilla

Sprouted Quinoa or Activated Oat Porridge with Chocolate, Coconut & Raspberries

American Pancakes with Coconut Yoghurt and Seasonal Fruit Compote

Vegan Banana Bread

For my classes, you are requested to take a home covid test within 48 hours of attending your class.
